WIAW – Dad’s for Dinner

Hey everyone! It’s a great day because it’s WIAW! i.e. my favorite day of the week. These are Monday’s eats!

Breakfast

I came home from cross country and I couldn’t even do 8 minute abs because I was so. hungry. I didn’t eat breakfast before practice which wasn’t one of my best ideas… I barely made it home. So I had toast, then did 8 minute abs, then had a green smoothie. It was a big deal that I changed my routine and ate before 8 minute abs! And since I was so rushed I didn’t take a picture… so here’s yesterday’s breakfast, the exact same thing, just eaten at once 😉

Lunch

I ate lunch around 3 (due to my lake breakfast). Then I found out we were going to my dad’s for dinner, and I started getting stressed. What if I don’t like what’s for dinner? What if I’m not hungry? I felt so bad. I hated the feeling I had.

I now get cheese.. and mayo on my sub! 😀

Eventually it went away and I wanted dinner. We went over there to have chicken and pork chops on the grill. Nothing I really wanted, but I made a compromise. I’d take a chicken breast and make a salad!

Dinner

I had a nice time at dinner and enjoyed my time there! I made this salad, and it was so good. Also we had some steamed garden fresh broccoli on the side 😀

MIMM – A Bit of Everything

I can’t believe I go back to school in two weeks. Where did the summer go?! I have quite a few marvelous happenings that I want to share, so let’s get started!

Marvelous… All of last week was spent at the fair. My cross country team had to clean up after all the concerts so we got in free everyday! I will admit, after a few days I was pretty sick of the fair food. I didn’t think it was possible to get sick of elephant ears!

Marvelous… My garden is doing amazing. I have so much produce I don’t know what to do with! I think I’ll do a more detailed post of the garden… coming soon! This is yesterdays haul, and I still have to go back today!

Marvelous… the little cafe we went to last week! Oh my goodness it was so cute. And their menu was fantastic! It was hard, but I finally decided on the chicken pesto panini.

Marvelous… finding my FAVORITE ice cream flavor at the stand. Peanut Butter Mackinac Island Fudge. It’s a rarity to find, so if you do you MUST get it. So. Yummy.

Marvelous…being in a fashion show! I was asked last minute to model some dresses for a local boutique and of course I said yes! It was my first time ever modeling, and it was so much fun!

So that was a bit all over the place but that’s okay! I have so many post ideas but I need to get writing first, lol 😀 Hope everyone’s Monday was as good as a Monday can be!

Currently

Hey everyone, long time no see! I’ve been tagged by Miranda to do this little survey floating around, and I thought now would be the perfect time! But first I’m gonna talk a little about what I’ve been up to. I’ve been at “the cabins” with my dad’s family for the past couple of days. I’m supposed to stay for the week, but I had to come home early since cross country officially started!

I had a lot of fun there. I didn’t have any plans so I just took each day as it came. Every morning I ran the 5 (hilly) miles around the lake. Breakfasts were usually toast and cereal, lunches were sandwiches, and dinner was whatever was made. I actually ate all of the dinners, not worrying about time or what they were! I hardly took any pictures, which is why this post is looking a little wordy 😉 Anyway, I had a really nice time catching up with my family and just relaxing. I mean, look at this view we had everyday!

Elephant ears and funnel cakes and caramel apples and french fries. Okay, fair food! It’s fair week!

Avocado Turkey Salad

What really bugs me is when people spell avocado wrong. Everyday on Pinterest I’ll see “avacado” or “avocodo”. Come on people! #grammarnazi

Anyway, I think it’s finally time that I share this wonderful little treat with everyone. I’ve been making it (almost daily) this past month but am yet to share! Really, it’s hardly even a recipe. No baking or hard work required. Just a little mixing!

Avocado Turkey Salad

Ingredients

1/2 ripe avocado

3-4 slices turkey

pepper

lime juice (optional)

1 tbsp mayo (optional)

You literally put everything in a bowl and mix.

Spread on some toasted whole grain bread, top with spinach, and that’s that! Lunch! (or dinner 😉 ) It was both for me yesterday!

Overnight oats in a jar with 1/2 cup oats, almond milk, greek yogurt, 1/2 sliced banana, blueberries, and peanut butter!

I read my book a little then decided between oatmeal or a sandwich for lunch. The sandwich won.

Then I went blueberry picking with mom! It reminded me of Katherine’s post, which was so lovely!

And THEN we picked the first batch of veggies from my garden! They were delicious with dinner 🙂 there’s just something about eating your own produce that tastes so good!

WIAW – Protein Pancakes

Does anyone else’s Bloglovin’ mess up? It never shows me new posts until long after they are posted, and sometimes it doesn’t show me posts at all! Anyway, it’s time for WIAW! Thanks for hosting, Jenn!

You guys should be extremely proud of me. I put effort in to all three meals! Say whaat? Yep! A much better day than last week when I ate the same meal twice in one day

Breakfast was a new recipe. Protein pancakes!

Just put 1/2 cup oats, 1 egg, 1/2 banana, 1/4 cup cottage cheese, a scoop of Greek yogurt, and 1 tbsp whole wheat flour in a blender. Pour on a low/medium setting griddle and top with whatever you like! Each side takes quite a while, so don’t worry about burning them.

Then I went on a 5 mile run, and when I got home I was just starving! I threw together a favorite –

This was my first time adding chia seeds to my toast and I loved it!

I felt ambitious at lunch, too, and it resulted in this –

Whole wheat rotini with peas, spinach, tomato, pesto, feta, parmesan and an egg! Totally random but very good!

As i went to snack on grapes, I was disgusted to see:

mold. In the garbage they went.

I was on a bike ride when my grandma called and asked to go golfing. I’ve only been out once this year so of course I was in! I had an apple (not pictured) to hold me over to dinner. I golfed a 68. (For those of you that don’t know, a par is 36. I’m not a very good golfer 😉 )

I’ll admit, I was thinking about dinner the whole time we were golfing. I may or may not have been crabby when I got home due to hangryness.

Grilled salmon, corn on the cob, salad, and avocado! The best part was definitely the corn. Avocado in second, salad because I needed some greens, and salmon… I didn’t like it very much. It has an odd taste. I still ate it though, because it’s so healthy. Why don’t I grill more often?!

I was greeted with many, many of theses babies during the day.

So, that was my (very successful) day of eats!

Lake Antoine Classic 15k

Ever heard of a 15k? Me either, which is why I had to run this race! I know I didn’t let anyone know I was running, but I didn’t even know I was running until the day before the race.

So a 15k. Three 5k’s. 9.3 miles. I had no idea how I should plan to run. Keep a fast pace? Start slow? It’s an odd distance. What I ended up doing was start at a comfortable but quick pace, and at mile 5 start picking it up little by little. It was actually a trail run, not road race. The course was absolutely BEAUTIFUL. We ran around a big lake on a tucked away trail where no motor vehicles are allowed. We were in the shade for the good part of the race (yes!).

My goal pace was to get 8 minute miles or lower. I mean, if I can do an 8:04 min/mile for 13.1 miles, I should be able to, right?

Well, I did! I finished in 1:12:30, a 7:48 pace!

Afterwards I had a banana, half a bagel, and a Clif Crunchy Peanut Butter bar. <— yum. I wore my Mizuno Wave Rider 16’s.

The rest of the day was spent with a bath, a nap, and a pizza. Blt pizza, to be exact! (I did pick quite a bit of bacon off. But I left some!)

I think this’ll be my last race before cross country season which starts on the 12th! I am excii-ted!
