Not enough time in the day

I am so behind on posting! I’ve just been enjoying spring break and relaxing. It’s hard to get back into the swing of things!

Yesterday was super busy. Before heading to town I had a delicious breakfast of oatmeal, bananas, almonds, and honey. It is making me like oatmeal more and more!

We did some errands and shopping  but before we were done we got hungry so we went out for lunch. I love this restaurant. I got a Chicken Pesto Pita which was super good, but my mom’s order was the real star. This is not just grilled cheese. It’s on pumpernickel bread with an amazing blend of cheese and a mustard. It’s perfect.

After some more shopping we finally went home. I went on a quick run before heading to my cousin’s for a fish fry. Our contribution – Cabbage, Apple, and Almond Slaw. It was super easy to throw together and tasted great! We also used to whole bag of cabbage, not just 4 cups. There was still plenty of dressing.

I was super brave. I tried fish! This is a huuge step for me. And you know what? It was good! I went back for more!

When my aunt brought out dessert I swear vultures took over. That plate of cow pies was gone in 3 seconds! I even let myself have one!  When we got home I was so tired and just went to bed.

              

This morning.. the longest run of my life. 9.8 miles! I was pretty disappointed when I woke up because it was snowing. Seriously?? It’s April! But I sucked it up and went outside and it wasn’t even that bad. I felt really strong at the end and could’ve done more! That’s a good sign, right?

I had a banana with peanut butter before and after I had a fantastic breakfast. Eggs, toast, sausage, and a green smoothie. Doesn’t get much better than that! Oh my gosh it was so good.

I haven’t been hungry for lunch but for dinner we’re planning on making Chicken Enchiladas. I’m pretty pumped! We’re painting my room right now so pics to come soon! I’ve also got tons of recipes. We’ve been eating well! The rest of the night will be spent watching the Tigers then some basketball.

Final Four tonight! Who’s your pick?

My dad is there. I am so jealous. I’m probably rooting for Michigan since I live there, ya know!

    • Haha! I don’t normally eat it- bad experience. I was in a shop and sampled a mustard. Little did I know it was the hottest dip they had! My mouth was on fire. So I don’t eat mustard very often!
