One more day until spring break officially starts! I’m so excited to have no plans and just relax. It’s the first year that we’re not going to Florida so that’s a change! I could really use that sun right now.
This week’s WIAW is going for a little spin. I’m giving you the recipe from dinner last night! And it fits the green theme 🙂 Thanks to Jenn, as always!
Skinny Chicken and Broccoli Alfredo
2 chicken breasts (cut and cooked)
8 oz frozen broccoli (chopped or whole)
8 oz rotelle (or any short noodle)
2 tbsp olive oil
2 tsp fresh garlic
2 tbsp flour
1 cup chicken broth
1/4 cup milk
1/4 cup Greek yogurt
1/2 grated parmesan cheese
Cook pasta. Add broccoli when there’s a few minutes left.
Heat olive oil in skillet over medium heat. Add garlic, stirring constantly. Add in flour.
Pour in chicken broth, then milk, then Greek yogurt. Turn heat to low and let thicken for a few minutes.
Turn heat off, add parmesan and cooked chicken. Pour over noodles and broccoli and stir.
