Moving Uphill

I don’t know if any of you know, but I am depressed. Like really bad. I’ve finally told my mom and confided a little bit. My dad came over and we told him too. We’re going to get help. I’m gonna start talking to someone. I think I’m starting to get better. Just telling them made me feel good, like it’s out of my system and they can help.

It’s been really nice out the past couple days and that makes me feel a lot better. Nice like getting to run in capris!photo 5 (11)

Yesterday my mom and I took a ride to the big town and did some shopping! Kohl’s is honestly the best store. Ever. Such great deals!

I got a nice brand new Colombia jacket ($230) for $46 plus 30% off! 2 in 1. It will be great for xc skiing!

I also got a few shirts, socks, and some specialty food. Everything was so cheap!

For lunch we went to The Vierling. We couldn’t have meat since it was Friday, but we managed to prevail! I got a Greek Panini.

It was a new thing for me. I’m not used to ordering anything but plain pasta! But it was good. Really flavorful! … Unlike the coleslaw. I think they took cabbage and added milk. It was so bland!

An open Whitefish sandwich. Guess what? I tried it! And LIKED it! I’ve never eaten fish so that is a huuge step! I even finished it for her.

Key Lime Pie. My first time ever having that as well! It was definitely homemade. The lime was pretty strong! The crust was to die for. We split it. It was just what I needed after eating!

We did a little window shopping, didn’t buy anything. As we were leaving, I saw an ice cream shop. I haven’t treated myself in a long time and said I deserve it! I think I need to treat myself more! I didn’t regret it and really enjoyed it! A little ice cream won’t hurt me!

It was from the cutest little shop, Doncker’s. They had a restaurant upstairs, and we’re definitely going there next time we come to town!

So, I think I’ve taken the first step to get better. I’m opening up to my parents and I’m gonna try to be more social. It can only get better, right?

Sweet Potato Banana Bites

Have you ever been over to The Lean Green Bean? Go right now. Lindsay has so many awesome recipes and I just really like how she’s got her blog!

I decided to steal her recipe for Sweet Potato Banana Bites. I’ve seen them a few times, and since I have an abundance of taters and an overripe banana I finally made them! They are so easy!

Ingredients

1/2 cup sweet potato (cooked)

1 ripe banana

1/4 cup peanut butter

2 eggs

1 tsp vanilla extract

cinnamon (your preferance)

chocolate chips (if wanted)

Directions

Spray mini muffin tin with non stick spray!

Mash sweet potato and banana in bowl.

Add the peanut butter, eggs, vanilla, cinnamon, and chocolate chips.

Spoon into mini muffin tins

Bake at 375 for 20 minutes or until they’re not soggy.

Enjoy! You will probably have to wait for them to cool to take them out. Or else they will stick to the pan. Mine all did. Hence, SPRAY. Or use cups.

WIAW {Skinny Chicken and Broccoli Alfredo}

One more day until spring break officially starts! I’m so excited to have no plans and just relax. It’s the first year that we’re not going to Florida so that’s a change! I could really use that sun right now.

This week’s WIAW is going for a little spin. I’m giving you the recipe from dinner last night! And it fits the green theme 🙂 Thanks to Jenn, as always!

WIAW GOES GREEN

Skinny Chicken and Broccoli Alfredo

Ingredients

2 chicken breasts (cut and cooked)

8 oz frozen broccoli (chopped or whole)

8 oz rotelle (or any short noodle)

2 tbsp olive oil

2 tsp fresh garlic

2 tbsp flour

1 cup chicken broth

1/4 cup milk

1/4 cup Greek yogurt

1/2 grated parmesan cheese

Directions

Cook pasta. Add broccoli when there’s a few minutes left.

Heat olive oil in skillet over medium heat. Add garlic, stirring constantly. Add in flour.

Pour in chicken broth, then milk, then Greek yogurt. Turn heat to low and let thicken for a few minutes.

Turn heat off, add parmesan and cooked chicken. Pour over noodles and broccoli and stir.

Serve!

Tidbit Tuesday – All About Me!

Okay I’m finally doing the survey you’ve probably seen 37 times. I love learning random facts about people, so maybe you’ll like learning more about me!

a: age – 14. I’m a baby!

b: bed size – full. Just big enough for me! At my dad’s I think I have a queen though.

c: chore you dislike – picking up my clothes. I can never decide if something’s dirty or not and it ends up on the floor!

d: dogs – I got bit by a dog when I was 18 months and had to go to the ER. So for about 10 years I didn’t have anything to do with them. Now I’m more accepting of them and really like them! I don’t think I could have one as a pet though. I’m not home enough! I like the big, loving dogs. Small yippy dogs aren’t my fav.

e: essential to your day – exercise. I just feel like it was a totally wasted day if I don’t get any.

f: favorite color – purple. It’s a good school color to have! I also like teal/mint/sea green. So pretty.

g: gold or silver – It really doesn’t matter. I don’t wear much jewelry anyway.

h: height – about 5’5″. I’m pretty tall in my school. I hope I grow a lot more though! Basketball!

i: interesting fact – I used to have Selective Mutism. It’s a form of anxiety where you can’t speak in a certain situation. It was ruining my life and putting a huge amount of stress on my parents. I guess I grew out of it because now I can talk to anyone. But it was really hard. There’s still a few people I can’t bring myself to talk to. I’m working on it.

j: job title – Student. I want to get a job though for some extra $! No one is currently hiring 14 year olds though.

k: kids – I really don’t like kids. Or babies. No plans right now, but I’m sure they’ll be in the future.

l: live – Michigan’s Upper Peninsula! It really is a hidden gem. We have a lot to offer. I recommend taking a trip up here some time in your life! It’s beautiful.

m: mom’s name – Jeannie.

n: nicknames – Growing up everyone called me Pie. My grandpa started it and it just stuck! Then school came around and it kind of disappeared. Sometimes my mom calls me it still. Grandpa still does!

o: overnight hospital stays – nope. Well a few years ago my mom threw out her back and we went at about 3 in the morning. But never in my own bed.

p: pet peeves – people. hahaha so many things bother me. Wasting, being fake, being inconsiderate. The littlest things can dampen my mood. I’m working on it.

q: quote from a movie – “She doesn’t even go here!” or anything from Mean Girls. Best quotable movie ever.

t: time you wake up – 6:40 on school days and 8-8:30 on weekends. I used to sleep til noon! I’ve changed so much. I can’t believe how I used to live!u: underwear – I do wear underwear.

v: vegetables you don’t like – I can’t think of a vegetable I don’t like. Are beets a veggie? I don’t like beets.w: what makes you run late – having to pee. I always go to the bathroom the last thing before I leave the house! I pee so much it’s crazy.

x: xrays you’ve had – wrist and teeth

y: yummy food you make – I don’t have any special recipes. I do make some pretty good noodles though! I’m really not the best baker. Following directions is just so hard. Oh I’ll substitute some uncooked chickpeas for soaked chickpeas. Not the smartest.

z: zoo animal favorite- probably tiger. or any big cat. Monkeys are really cool too! Mini people. I’m not much of a zoo person.
Well I hope you enjoyed reading my boring facts! I really am an interesting person, it’s just when I go to write about it I draw total blanks and seem like a vegetable. It’s hard to get to know me!

A Marvelous Ending

Am I really….. done?! No more basketball??? Well, for two weeks until open gym starts 😉

I know, we still have high school ball. But this was the last travel tournament and last time this exact team will ever play together. Next year we’ll be split up on Varsity, JV, and Freshmen. And how cool that it was in our home gym, the first time we’ve ever hosted a tournament!

The night before the tournament (Saturday) we went to a benefit for a little girl with leukemia 😦 and so I could load up on my carbs. Spaghetti FTW!

I love eating so much. The coleslaw was amazing! The desserts honestly were disgusting.

We had games at 10, 2, and 6. I love eating a good breakfast to keep me going!

I also had a leftover piece of the Oatmeal Bake. Yum! And a banana after the first game.

We didn’t disappoint the home crowd. We went 3-0 to seal the championship!

Sadly, the last game I wanted to puke and cry because I ate way too many sweets. It’s not like I even ate that much, my body is just so not used to it. The concession had a bunch of baked goods to get rid of and they were way too good a deal for me to pass up. 2 for a quarter, I mean come on!

Pumpkin bread, banana bread, “energy bar”

They were these little mini loaves and so cute! The “energy bars” had oatmeal, peanut butter, coconut, sunflower seeds and chocolate chips. These weren’t the most unhealthy things I could’ve chose. I didn’t pick cupcakes or cookies!

I went for a 6 mile run after to feel better, and since it was my long running day for training. I had to stop at Mcdonald’s and pee, hahaha. I was feeling better after. I took a shower and went to bed! I was exhausted!

I just realized I have a stats test tomorrow for the first grade of the marking period.. wish me luck!

(Gluten-free) Baked Oatmeal Casserole

I’m always looking at recipes on Pinterest but I never end up making them. I can’t decide! This has been on my board for so long and I’m always looking at it. We had all the ingredients for it and said just make it! (with a few tweaks)

adapted from Gluten Free Baked Oatmeal Casserole

Now here’s ours!

Ingredients

2 cups rolled oats (gluten free)

1/3 cup brown sugar

1 tsp baking powder

1 tsp cinnamon

1/2 tsp salt

1 cup nut pieces (walnuts, pecans)

1 cup strawberries

1/2 cup dark chocolate chips

2 cups milk

1 egg

2 tbsp butter

1 tbsp vanilla extract

1 ripe banana

Directions

Preheat oven to 375. Spray 7 by 10 baking dish.

In a bowl, mix together oats, sugar, baking powder, cinnamon, salt, half the strawberries, half the chocolate, and half the nuts.

In another bowl, mix the egg, milk, and vanilla.

Add the oats to the baking dish. Arrange leftover strawberries, nuts, chocolate, and a sliced banana on top.

Pour the milk mixture on top, tilting to spread around.

Bake 35-40 minutes or until milk is set and it’s golden brown.

Serve! Maple syrup, cinnamon, and brown sugar are just a few toppings you could add. The possibilities are endless!
