WIAW and a New Recipe!

I’ve really had a variety of foods lately. So this WIAW is more like a What I Ate Week!

On Saturday I went to my most favorite place in the world – Noodles & Company! However, I haven’t been there since I started eating healthy, and my usual buttered noodles honestly didn’t sound that good. So, what did I get? Bangkok Curry.

Sadly, it was not my favorite. Oh well, now I know. But I don’t know when the next time I’ll be able to go to Noodles & Company is!

I’ve been eating a lot of salads lately. I really like adding something in, like rice or chicken or corn.

Breakfast today consisted of bran flakes, Greek yogurt, flax seeds, nutella, strawberries, and almond milk. Keeps me full til lunch!

For dinner tonight we made Pad Thai. I’ve never had it, so I was kind of unsure. Unnecessary! It was yummy! And will definitely make a great lunch tomorrow! Recipe coming soon 🙂

I’ve also been snacking on the pumpkin pie my grandpa brought over…… sometimes I need a little junk!

Oh! If anyone remembers, I said awhile back I had to make a green smoothie for the Healthy sELF Challenge. My previous experiences with green smoothies had not been very good, but this one is a winner!

Leigha’s Green Smoothie



*I really don’t measure much… just throw whatever in!*

2 handfuls spinach

1 banana

2 spoonfuls Greek yogurt (vanilla)

1 spoonful peanut butter

almond milk

handful of icecubes


Blend until no ice chunks….

Viola! Delicious green smoothie! I loved it because it didn’t taste like spinach. You could slightly taste the peanut butter which made it thicker and even more scrumptious! I am definitely making this again soon. And such simple ingredients! 🙂

Another Win and OOTD #2!

It was tough, but my team came from behind and won the basketball tournament! It was a long day but not nearly as long as the last tournament.


We won our first game. Not very interesting. Lost the second game, and won the third. Since we had the second best record, we still made it to the championship!

The championship game was against the team we already lost to. We were ready for revenge! We won 28-26. I had 16 points!

That was Sunday – on Saturday my mom and I went to Green Bay to do some shopping. More like looking! The only thing we bought was tights. Not even kidding.

This week is the official start of my half marathon training! 12 weeks… so close! Here is my plan! I’ve also got some recipes coming up soon 🙂


Although this post is pretty happy and lighthearted, I’m actually pretty depressed right now. I’m not sure what to do with all my time. My life just seems to be going nowhere. I think I need to be more social.

A membership to the gym… a coincidence because I just joined a different gym last week! And tanning… I don’t want to use it! My skin is more important to me than being pale.

I had a really light week of exercise so I was unsure how I’d do. But after I felt like I could’ve kept going so that’s good!

The race provided hot chocolate and fruit – YUM! I made this salad when I got home to hold me over until Green Bay.

WIAW and OOTD #1!

I’m very excited to bring you my first What I Ate Wednesday and Outfit of the Day!

Let’s start with my outfit. Since there was a home game today I had to “dress up”. Here’s what I wore:

I tried something new at breakfast today. Bran flakes, almond milk, Greek yogurt, flax seeds, and a banana.

For lunch I had an apple and the last of the chicken pot pie. It got better every day warmed up! I forgot a picture…

Throughout the day I let myself have a few of these.

Before the game today I had a salad – spinach, cheese, croutons, turkey, ranch. Pretty generic! No photo…

I have to include a meal worthy of sharing from yesterday! Honey Dijon Chicken with Long Grain and Wild Rice.



I squeezed in this workout today as my last before my 5K race on Saturday. So pumped!!!

Tomorrow I’ll be gone all day at a basketball game. Last regular season game! Where did the season go???

Chicken Pot Pie

I was pleasantly surprised to wake up this morning to a snow day! It must’ve snowed a foot last night!

I made some whole wheat waffles with Greek yogurt, honey, and a little syrup for breakfast. Yum!

I went to the gym and did this workout from Iowa Girl Eats. I think it’s good prep for my 5K on Saturday!


After that, I did this: 123 ab workout

Later I have piano lessons and a team dinner! The game today was cancelled because of the snow day. I’m excited to load up on spaghetti 🙂


OKAY, time for the food! Last night we made Chicken Pot Pie. It was delicious and even better warmed up today! Here’s the recipe:

16 oz bag of frozen vegetables (we had corn, peas, and carrots)

2 cut up chicken breasts

1 can cream of (your choice) soup (we used mushroom)

1/4 cup minced onion

1/2 cup milk

salt & pepper

1 refrigerated pie crust (2 if you want a bottom crust)



Mix all ingredients except pie crust in a bowl.



Spread into a pie pan (if you want bottom crust lay that down first)

Cover that with the pie crust. Fold in the edges and make some slits for circulation.

Cook at 400 degrees for 30 minutes or until crust is golden brown.

Marvelous in My Monday

DID THAT JUST HAPPEN. oommmgggg. As I finished writing this whole post, IT ALL ERASED. Take a deep breath…….. laugh about it. It’s not the end of the world.

It’s a coincidence that happened because this post was based on how blessed I am and to look at all the good things in life. Not the minor setbacks.

Well, this weekend definitely was better than last week. Yesterday for breakfast – all-you-can-eat buffet. Pancakes and SAUSAGE! (still not used to eating meat!) I ate a little too much. But I think my body really needed a break from health. It really cleaned my out (if you know what I mean ;)). A majority of the day was spent shopping with my mom. I got tons of new clothes and new cereal to try!! I’ll be posting some outfits soon 🙂 Again, I’m so lucky to be able to buy whatever we want/need.


We went to my Grandma and Grandpa’s for dinner (roast beef) Still don’t like that. I’m not a “beef” girl. When we finally got home, I was ready for my run. At the gym I did 7 miles. It’s like death during it, but the second I step off I feel like heaven. After my shower I had some cereal. (Kashi Autumn Wheat) The rest of the night was literally spent on Pinterest with my mom. She finally made an account!

I had no school today – yay President’s Day! I still woke up fairly early around 8. I’m pretty sure most 14 year old’s weren’t up yet! I felt so great this morning. So refreshed. I did some yoga and Pinterested with my mom. Eventually we went to my aunt’s and visited with her. Then we went cross country skiing and it was beautiful. The trail was just perfect. We needed to use the chicken breast in the fridge so we made a chicken pot pie! Recipe coming soon 😀

This is my last busy week. Basketball, basketball, basketball. At least there’s no school on Friday!

Remember to always look at the good things and not dwell on the bad. Think: will it even matter in a week? That’s what usually helps me 🙂

Not the Best Week

I have the winter blues. I get it every year. I just feel like exploding. I hate school so much. Middle school is so stupid. I’m honestly considering homeschooling myself. I can’t stand the immaturity.

All that aside, I had one of my last long weeks. I can’t wait to be done and have time AT HOME.


Monday, 2/11

Cheerleading competition. I got my back tuck!!! (a back flip) We won. First place! That was my last competition ever, since I’m not cheerleading in high school. I’m happy I at least got to experience cheer for the past two years. It has helped so much with my muscles.

Tuesday, 2/12

Big rivalry basketball game. I’m the manager for the high school team, so I go to all the games and take stats. It was at their place. My varsity team lost by one point in overtime. It was the first time they’ve lost to that team in SEVEN years. Yeah it was a pretty big upset. I ran 3 miles before the game, so that was my workout for the day.

Wednesday, 2/13

More basketball. This time a home game. The team won. My cousin Laura texted me and wanted to go for a run, so after the game we went for a half hour jog. Laura is not the fastest runner. I was holding back A LOT. Whatever though, I was still exercising. It was nice catching up with her, too. Beginning of Lent! I didn’t give up anything… tsk, tsk.

Thursday, 2/14

Was it even Valentine’s Day? Below is all I got. Thanks G&G! I did, however, go ice skating (by myself) and go to the library. I am such a loner. Oh yeah, there was also a school dance. So I stood around for 2.5 hours and watched people make fools of themselves!

Friday, 2/15

Got done with school early. Did a 3 mile run and went cross country skiing with my mom. The skiing was pretty good compared to the other times I’ve been out.

I was STARVING when we were done. My mom couldn’t decide what to do for dinner, so we went out. Fish Fry Friday! (not for me, I don’t eat fish) I did try my mom’s though. It was really plain. Nothing special. I got this soup.

Corn Chowder

I thought it was pretty darn good. Corn and potatoes and onions. I’d get it again. I had a vegan burger when I got home since I needed to eat more. I FINALLY watched “Pitch Perfect”. A cappella is pretty cool. I’d like to get a group together and try it sometime.

Saturday, 2/16

Basketball game. I HATE BUS RIDES. 3 hours EACH WAY. Not good for me. I looked at magazines and read my book. My team won JV and Varsity games. We stopped and McDonald’s on the way there and back. I didn’t get anything! It is so disgusting, honestly. Yuck! I ate healthy- turkey sandwiches, bananas, apples, and water. I can’t wait until everyone has to watch what they eat.

One more week of basketball. Two games. I can make it. Tomorrow I need to do a long run. At least there’s no school on Monday!
